Do I need a computer for each RCX or NXT?

No. You can have unlimited groups working with RCXs or NXTs using the same computer. Of course, to maintain sanity, it is suggested to not have more than 4-5 groups per computer. Once the program code is created on the computer and downloaded, the running of the programs on bricks does not require the use of a computer.

Note: RCX and NXT sensors require different icons for programming, so it is suggested that classrooms using both RCXs and NXTs should not have those students working on the same computer to maintain sanity.
